As you may know to obtain a dark and oily fragrance bean from a green bean is a lengthy process. Green vanilla beans have no fragrance at all. Therefore, this transformation involves intensive skilled practices that normally takes 3-4 months to complete all these steps and we call it Vanilla beans curing process. This process consists of 4 steps
HOT WATER KILLING
Hot-water killing may consist of dipping the vanilla pods in hot water 63–65 °C(145–149 °F) for three minutes, or at 80 °C (176 °F) for 10 seconds. Reason of this step is to stop the vegetative growth of the vanilla bean and disrupt the cells and tissue of the bean, which initiates enzymatic reactions responsible for the aroma.
